How to Make Pies that are Easy and Taste Yummy! Pineapple Cream and Easy Lemon-Lime
These pie recipes are so easy to make yet so delicious they are sure to bring you compliments. Miz Ida's Pineapple Cream Pie is an old recipe but you know they are often the best. You can top it with your favorite meringue recipe or with whipped cream. It is delicious either way! The Easy Lemon Lime Pie is a perfect dessert for a hot summer day.
MIZ IDA'S PINEAPPLE CREAM PIE
1/2 cup sugar
1/8 tsp salt
6 tbsp flour
1 cup crushed pineapple(drained)
3 egg yolks
3 tbsp butter
1 1/4 cup milk
juice from 1 lemon
1 9-inch baked pie shell
In the top part of a double boiler, mix sugar, salt, and flour together; add the pineapple. Add the beaten egg yolks, butter, and milk. Cook in a double boiler over hot water, until thickened. Add the lemon juice and mix thoroughly. Cool slightly and pour mixture into the baked pie shell. Cover with your favorite meringue or whipped cream. Serve with a thin slice of lemon that is slit about halfway through then twisted slightly.
EASY LEMON-LIME PIE
1 9-inch graham cracker crumb pie shell
1 cup lemon curd or thick pudding
1 tbsp grated lime zest
1 tbsp lime juice
7 drops yellow food coloring
5 drops green food coloring
16-oz carton frozen whipped topping, thawed.
thin lime and/or lemon slices for garnish, if desired
Combine the lemon curd, lime zest, lime juice, green and yellow food colorings together. Fold 3 cups of the whipped topping into the mixture; blend in well. Spread the mixture into the graham cracker pie crust. Top with the remaining whipped topping. Chill. Before serving garnish with thin lime and/or lemon slices, if desired.
